Peanut Butter Balls
Sugar-Free. Grain-Free. Dairy-Free.
- 2/3 cup organic creamy natural peanut butter (almond, cashew or sunflower seed butter also works)
- 2 tsp liquid honey
- 1/8 tsp stevia (to taste, this can be omitted)
- ½ cup finely ground almond flour, add more 1 tsp at a time if mixture too runny to roll
- 1/2 cup dark chocolate (80% in form of chunks, bar, or chips)
Blend peanut butter, honey, stevia, almond flour together in a bowl. Add more almond flour by 1 tsp at a time until the “dough” is thick enough to roll into balls. Scoop 1 Tbsp into hands (more or less depending on your desired size) and roll the mixture into balls and place on wax paper lined cookie sheet. Place rolled balls in refrigerator until firm, about 45 minutes.
Once those are firm. Melt Chocolate. Place chocolate in a stainless steel bowl and melt using double boiler method (do not microwave).
Remove balls from fridge. Insert tooth pick into the firm peanut butter balls and carefully dip in melted chocolate. Place balls on wax paper and allow to cool. Keep refrigerated until ready to serve.
